Popcorn and Champagne … they go together like Harry & Sally. Like Bogie & Bacall. Like Harold & Maude: great alone, together sublime.

They’re the ideal pair because Champagne’s yeasty, toasty bready flavors crave the fat and salt of a perfectly popped and dressed bowl of popcorn. And then there’s all that texture: the crunch of the popped corn loves the fizziness of bubbles.

It’s a fine thing to do on these cold winter nights here in New England, and on February 22 especially, the night of this year’s Oscars. Make a big batch of stove top popcorn and pour a glass or two of your favorite sparkling wine. Grab a thick wool blanket and turn on the telly. Relish in all the glamour and shine and pop and fizz of the Oscars, and then give yourself an award, too, for making such a sublime and tasty popped production of your own.

The Harry & Sally

Le Berceau Blanquette de Limoux
+ Popcorn with Salt and Freshly Ground Coriander Seed

This sprightly blanc de blanc sparkling wine from the Lanquedoc, made primarily from mauzac (a white grape), with just a touch of chardonnay and chenin blanc, has an apple-y pear liveliness to it that pairs beautifully with the citrusy coriander on the popcorn. We popped this batch in just the neutral oil, then topped with maldon salt (kosher is good too) and the coriander seeds that we crushed with a mortar and pestle. Melted butter not needed! (Though really, a little wouldn’t hurt.)

+ Bacon Popcorn

From the Loire, this 100% Cabernet Franc sparkler bursts with wild strawberry and raspberry flavors — redolent of morning jam made with super ripe fruit — and finishes with a hint of yeasty goodness. What better to pair with this “breakfast in a glass” than bacon? We cooked off a pound of bacon, and used 4 tablespoons of the rendered fat to pop the corn. Once popped, we topped with 1/2 lb of the bacon, broken into pieces and of course, melted butter.

Champagne Perseval-Farge Brut NV “C. de Pinots” 1er Cru
+ Brown Butter Popcorn with Coriander and Parmigiano Reggiano

This rich and full blanc de noir, made with 55% pinot noir and 45% pinot meunier, is full of dried fig, almond, toasted wheat bread and baked apple flavor, all delivered though a sparkling cyclone of tiny bubbles. To match its warm intensity, we served it with popcorn seasonings that are equally as round and deep.

First, we popped the corn in 2 tablespoons of neutral oil, 1 tablespoon of butter and 1 tablespoon of olive oil. Once popped, we dressed it with brown butter, made by warming butter on a stove top until the milk solid have turned a warm brown (don’t burn!), and coriander seeds that we crushed by hand. We then topped with maldon salt (kosher is a fine replacement) and drifts of freshly grated Parmigiano Reggiano. The toasty coriander flavors help draw out the brown butter, and the Parmigiano is regal enough to stand up to this true 1er Cru Champagne. Spectacular.

Basic recipe for stove-top popcorn:

Supplies & Ingredients

– A heavy-bottomed pot, with a capacity of at least 3 quarts. This is key. Using a thin-bottomed pot will result in burned popcorn and a ruined pot.
– 4 tbsp fat. Neutral, high-heat oils, such as grape seed or vegetable work best, but for taste, we like to add in more flavorful fats. Use at least 2 tablespoons of the neutral oil, then supplement with butter, or bacon fat, or olive oil, or hazelnut oil or pumpkin seed oil or truffle oil. You get the picture.
– 1/2 cup of good quality corn kernels

Directions:

1. Add the fat to the pot and set over a medium flame. Once heated, add 3 kernels of corn and shake to coat. Put the lid on the pot. Here’s a crucial point: Leave the lid ajar to allow steam to escape. Doing this will give you big fluffy popcorn.

2. Once all 3 kernels pop, add the rest of the popcorn and turn the heat to medium-high. Shake to coat them with the oil.

3. Once the popping resumes, drop the heat slightly, and continue shaking the pot vigorously over the heat, all while keeping the lid ajar, until almost all have popped.

4. Remove from heat, and pour the hot popcorn into a wide bowl to ensure even distribution of your seasonings, sprinkle with the toppings of your choice and toss with your hands.

Issac’s Punch:

Ingredients (makes 15 cocktails) 3/4 Bottle of Bully Boy White Rum 1/2 Gallon of Apple Cider 7 1/2 oz Simple Syrup 7 1/2 oz Fresh Lime Juice

Directions: Combine all ingredients in a large pitcher or punch bowl and serve in a glass over ice. Bully Boy is a Boston distillery that makes hand-produced, small batch spirits with loads of New England character. Learn more about Bully Boy Distillers >

Boston Cocktail:

Ingredients 3/4 a bottle of Greylock Gin by Berkshire Mountain Distillers 3/4 a bottle of Apricot Brandy 7 1/2 oz fresh lime juice 12 Dashes of grenadine

Directions: Combine all ingredients in a large pitcher or punch bowl and serve in a glass over ice. Makes 15 cocktails. Berkshire Mountain Distillers (BMD) are the creators of Greylock Gin, which is the star of this cocktail recipe. Established in 2007, all BMD spirits are handcrafted in small batches in Great Barrington, Massachusetts.

All About Absinthe!

So, what is the deal with Absinthe? The notorious spirit is known for its tumultuous history and its fluctuations in legality throughout the years, its associations among some of the most famous artists and writers of the late 19th and early 20th centuries (particularly those who called Paris home), and of its supposed hallucinogenic qualities, especially of ‘la fée verte‘ – or ‘the green fairy.’

History and Definition

Absinthe originated in the canton of Neuchâtel in Switzerland in the late 18th century and is historically described as a distilled, highly alcoholic (45–74% ABV / 90–148 proof) beverage. True absinthes are carefully distilled from a variety of all natural herbs. Some of these herbs are regional and can include: sweet flag, angelica, dittany, marjoram, peppermint, tansy, melissa, sage, coriander, veronica, angelica, and hyssop, but will always include: green anise, fennel and the most important being, grande wormwood or Artemisia absinthium.

Absinthe traditionally has a natural green color but may also be clear. All absinthes are clear until they are soaked in natural herbs to color them after the initial distillation process. Although it is sometimes mistakenly referred to as a liqueur, absinthe is not traditionally bottled with added sugar; it is therefore classified as a spirit. Due to its high level of ABV, Absinthe is typically served diluted with water and sugar if served in the traditional fashion.

Owing in part to its association with bohemian culture, the consumption of absinthe was opposed by social conservatives and prohibitionists. By 1915, absinthe had been banned in the United States and in much of Europe, including France, the Netherlands, Belgium, Switzerland and Austria-Hungary.

Although absinthe was vilified, it has not been demonstrated to be any more dangerous than ordinary spirits. Recent studies have shown that the absinthe’s psychoactive properties (apart from that of the alcohol) have been exaggerated.

What does Absinthe taste like?

The core of absinthe lies with anise, fennel and grande wormwood. These 3 herbs combine to give what is usually explained as an herbal and anise taste and smell, and NOT that of black licorice, as many inaccurately describe. Originally used as a digestive to settle one’s stomach, absinthe is a refreshing drink, especially when prepared correctly!

Preparation

What is perhaps the oldest, and thought of as the purest method of Absinthe preparation is often referred to as the ‘French Method.

The preparation involves placing a sugar cube on top of a specially designed slotted spoon on top of a glass filled with a measure of absinthe. Iced water is poured or dripped over the sugar cube to slowly and evenly distribute the water into the absinthe. The final preparation contains 1 part absinthe and 3-5 parts water.

As water dilutes the spirit, those components with poor water solubility (mainly those from anisefennel, and star anise) come out of solution and cloud the drink. The resulting milky opalescence is called the louche (French for opaque or shady). The release of these dissolved essences coincides with a perfuming of herbal aromas and flavors that “blossom” or “bloom,” and brings out subtleties that are otherwise muted within the neat spirit.

Ingredients
1.5oz Bully Boy Hub Punch
3oz ginger ale
3oz Soda Water

Directions:
Add all ingredients in a glass with ice. Squeeze a lemon wedge and garnish.

2 oz. Bully Boy Organic White Whiskey
1 oz. Cocchi Americano
Dash of Orange Bitters

Directions
Stir all ingredients over ice and serve down with an orange peel.

.25 oz lime juice
.25 oz grenadine
5 oz ginger ale

Directions
Add ingredients over ice and top with 4-5 oz of ginger ale (7-UP works nicely, too).

Whiskey Hot Toddy

Ingredients:
A cup of hot black tea

1 oz Evan Williams 1783 
Juice of half a lemon
1 spoonful Royal Rose’s Cardamom Clove Syrup

Directions: Combine all ingredients in a mug and stir to combine.

Historically, dropping some whiskey and a splash of lemon in your tea turned an afternoon tipple into a salve for the common cold. The warm tea soothed your sore throat and the vitamin C in the lemon juice provided support for your ailing immune system.

Royal Rose’s Cardamom Clove Syrup provides the experience of infusing a handful of spices Ina Garten-style over a warm stove for hours without any of the work. Our friends at Royal Rose have lovingly made this syrup so on a chilly day when your nose is runny and you feel under the weather you can add a drop of Cardamom Clove into your toddy, and head back to bed.

Ingredients:
A cup of your favorite hot cocoa
1 oz Bittermens New Orleans Coffee Liqueur
1 spoonful Royal Rose’s Three Chile Simple Syrup

Directions: Combine all ingredients in your favorite mug and stir.

Bittermans New Orleans Coffee Liqueur tastes of Brazilian coffee beans and organic French chicory root that New Orleans coffee is famous for. A touch of vanilla and some Belgian chocolate syrup makes this liqueur perfect for hot cocoa.

Three Chile Syrup is hand-made with fresh poblano, jalapeño peppers, and dried ancho chiles. As a savory blend of sweet and spice, it’s a fantastic mixer for vodka, mezcal, and whiskey. Also, try it as a delicious marinade for meats and veggies!

Make a batch of this Infused Hot Cocoa, grab a blanket and settle in for a glorious evening of Netflix.

Mulled Wine

Ingredients:
A crockpot
1 Bottle Dry Red Wine or White Wine (not too minerally or tannic)
½ a cup Sugar
Cinnamon sticks, Cardamom, Cloves, Star Anise to taste
Sugar/Simple Syrup (1/2 cup to 2 cups)
Lemon peels & Orange Slices

Directions:
Make sure the crock pot is large enough to hold a bottle of wine and pour it in. Turn it on low and add the desired amount of spices. Be careful with the Star Anise because it is very powerful. Add about ½ a cup of sugar to start with and as the wine mulls, taste it along the way & add more if needed. Last but not least, add the slices of oranges & lemon peels for that last little kick of zest. Heat it till warmed & the wine has taken on the desired amount of flavors from the spice. Serve in ceramic or glass mugs for a true European experience.

Continuing Boston’s legacy as the center of rum production, Bully Boy’s signature White Rum is made with Blackstrap Molasses. Using techniques handed down from Cognac distillers, they use a blend of cuts to create white rum that has both depth and a remarkably smooth finish. Boston Rum grew out of a desire to resurrect the city’s storied history of rum production, which dates back to 1667. Colonial Americans had a healthy appetite for rum, and much of the original spirits were distilled in Boston. Made with blackstrap molasses, Bully Boy Boston Rum has a bold flavor, which is created using deeper cuts on the still. It’s aged in a blend of used bourbon and red wine barrels, and the final product has a fruity complexity, a subtle vanilla note, and a bit of sweetness.

White Whiskey

Made from Cannonau (a.k.a. Grenache), this is a highly polished and very characteristic example of the staple red grape from Sardinia. Pretty aromas of cassis, herbs and red flowers with flavors of red berries and a bit of smoke.  Try it with a heavily spiced chicken recipe, like this Cayenne-Roasted Chicken recipe.

From the Northwest corner of Spain, this crisp, unoaked beauty has flavors of melon, peaches, baking spices and a hint of wet stone.  Impeccably made and great for nearly any occasion or meal, but especially suited to a lighter chicken recipe. One of our long time favorites!  From Southwestern France, right in between the Atlantic Ocean and Mediterranean Sea.  A blend of mostly Merlot and Syrah with a little Grenache.  Dry and smooth with engaging flavors and aromas of red flowers, black olives and pepper.  Great with so many different foods, but try it with your favorite veggie pizza or this recipe: Roasted Garlic Ricotta, Ramp and Wild Mushroom Flatbread.

South Africa
Pinotage is the signature red grape from South Africa and is a hybrid of Pinot Noir and Cinsaut. False Bay makes an excellent example and has aromas and flavors of dark ripe fruits, dry cocoa and a hint of eucalyptus.  This is a rich wine but has soft tannins making a great pairing with lean pork dishes. Pure bright fruits flavors of tart cherry and fresh raspberries, medium bodied and soft, delicate tannins. Perfect for grilled porkchops or roasted pork tenderloin.

Made from Touriga Nacional, Baga and Syrah, this wine has a deep ruby color and intense and complex aromas of black fruits and spices.  On the palate it shows an excellent structure, good balance, round tannins and a remarkable persistence. Pair with the richest pork dish you know. Roasted Pork Belly works!

What’s the difference between Champagne, cava, and prosecco? Watch a basic overview of these different sparkling wine categories with Eric Taylor, our resident wine expert at Bottles.

We’re here to help make sense of it, and so we have broken the giant world of sparkling wine into three really big categories:

Champagne and sparkling wines made in the style of Champagne:  

Champagne is not only a style of sparkling wine, but also a place.  Only sparkling wines made in the very small region of Champagne (just to the East of Paris) can be called Champagne.  Among other very strict regulations, Champagnes must be made in a very particular fashion: they must get their bubbles from a secondary fermentation that happens inside the bottle.  While this is costly and time consuming, it’s worth the extra effort because it gives Champagne its signature richness, complexity and tiny lively bubbles.  Some of the most famous and expensive wines in the world are from Champagne:  Dom Perignon, Louis Roederer’s Cristal, Krug and Veuve Clicquot.

New World wine makers, mainly from California, are making brilliant wines in the very same style and manner as Champagne.  These wines are made using the same grapes that are used in Champagne (Chardonnay, Pinot Noir and Pinot Meunier) and taking the effort and time to produce sparkling wines exactly as they would be made in France.  The biggest difference is price:  many top notch sparkling wines from California are half the price from their more famous counterparts in France.  Great examples are: Schramsberg, Mumm Napa, Chandon and Roederer Estate.

Prosecco:

Prosecco is a light, beautiful sparkling wine from the northeast corner of Italy made from a not so famous grape called Glera.  Proseccos are generally light and fruity, intensely aromatic, most with flavors of tart green apple, pear, white peach and apricot.  Prosecco is meant to be consumed young, and unlike Champagne, does not benefit from additional aging.  Also, prosecco is usually very inexpensive and makes it a great choice for large gatherings, casual parties and everyday drinking.  Some proseccos to look out for are: Mionetto, Ca’ Furlan, Bisson and Carpene Malvolti.

Cava:

Cava refers to sparkling wine made in Spain with the majority of it grown and produced in the Northeast corner of Spain around the grand city of Barcelona.  Cava has a long and rich wine making tradition in Spain, but has only recently gained popularity in the US.  The huge rise in popularity is due to the outrageous value that cava can offer.  Made in the exact same manner as expensive Champagne but with different grapes, cava is bright and vibrant but has many of the complex and sophisticated as its more expensive French counterpart.  Cava is great with cured meats, cheeses, appetizers and things that one would serve at a party.  Some of the most well known brands are Cristalino, Mercat and Raventos I Blanc.
