Spanish Wine Recommendations

We always enjoy featuring different wine regions on our in-store display, here at Bottles in Providence. Currently, we’re taking a good look at Spain, by showing some of the key regions of the country. Wines from Galicia, Rioja, and Catalonia were chosen to highlight the vast differences of styles, flavors and cultures you can find all over Spain. Let’s take a closer look at one of my favorite wines from Catalonia, Mercat Brut Nature.

The Mercat Brut Nature is a wonderful example of Cava, a Spanish sparkling wine, and comes from the Northeastern corner of Spain. This Cava is made using traditional methods by El Xamfra, a top producer of Cava in Catalonia. A great quality sparkling wine for a great price! 91 Points, The Wine Advocate.

In the Penedes region of Catalonia, the winery ages the Brut Nature twice as long as the laws of Cava insist. They make this wine with almost ‘zero dosage’, meaning that very little sugar is used for the secondary fermentation. Only a mere 1/2 gram of sugar per liter is added for the natural bubbles to occur, making this wine one of the dryest bubblies on the market. Aging also makes this Cava taste mature. The Brut Nature has beautiful fresh fruit flavors, an elegant mid palate, and a super-long, mineral laden finish.

Aside from the three regions we are highlighting, we are also devoting a whole section to Garnacha, Spain’s most widely planted grape variety with a white, pink and red Garnacha. I recommend the Clos Dalian White Garnacha, which is light, fun, and floral. This wine’s bold aromatics and clean mouthfeel make it perfect for springtime.

Cheers,
Nick

Foolproof Brewing Company

Foolproof Brewing Company is the newest Rhode Island craft brewery, and they are located not to far from us in Pawtucket, RI. Nick Garrison, President & Founder of Foolproof, was kind enough to invite us over during their canning of Raincloud, a robust porter. We got to try beer fresh from the canning line, take a tour of the brewery, and let Nick guide us and give insider’s information about each of Foolproof’s year-round beer offerings: Barstool, Backyahd, and Raincloud.

Watch the video above, and be sure to browse our other brewery tours.

Empty cans of Backyahd, ready to be filled! Backyahd is Foolproof’s India Pale Ale, and a perfect pairing for grilling, summer bbq’s, and all your ‘backyahd’ activities.
Barstool is an American Golden Ale, and the beer of choice for a night out with friends. Foolproof 6-packs come in these handy and distinctive boxes. Conveniently portable, in our opinion.

The Foolproof guys at work! They have weekly tours of the brewery, so you can hang out, drink fresh beers, and see the brewery. If you’re near Pawtucket, Rhode Island, swing by and check them out.

We’re loving Raincloud at Bottles! This porter is “dark, smooth, and mysterious,” and a tasty treat for those rainy (or snowy) days.

Beer in a can? There are many reasons why Foolproof and Bottles like cans over glass bottles when it comes to our craft beer.

  1. Cans block all sunlight from the beer, which eliminates any chance for skunking.
  2. Cans have less airspace at the top, which increases the shelf-life of a beer.
  3. Cans don’t break & shatter! No one likes spilled beer.
  4. Cans are environmentally friendly and recyclable.
  5. Cans are lightweight, portable, and take up less space, making them perfect for hiking, the sailboat, the beach, picnics, golf courses…

Food Pairings: Italian Wine & Clam Linguine

If you stop by Bottles in Providence this month and notice a large wine display, you will be looking at our feature on The Italian Table. We’re sharing some food and wine pairing ideas from recipes inspired by regions in Italy. Keep scrolling to learn about Friuli-Venezia Giulia, how to make a simple Clam and Linguine dish, and some wines that taste great with that recipe. Thank-you to Edible Rhody magazine for providing such great recipes by local chefs around Rhode Island.

FRIULI-VENEZIA GIULIA
Located in the very northeast corner of Italy, Friuli is bordered by Veneto to the west, Slovenia to the east and the Adriatic Sea to the south.  With lots of mountains and mostly cool temperatures, wines from Fruili tend to be very light and acidic, making them perfect matches with lighter foods.

WINE RECOMMENDATIONS

2011 Scarbolo Pinot Grigio

This white is truly the perfect match to Clams with Linguini.  Super fresh and juicy, the wine’s beautiful acidity will cleanse your palate of the intense garlicy flavors in the dish.  However there are subtle flavors of honey and juicy stone fruit that will compliment and not overpower the beautiful flavors of the clams.

2010 Scarbolo Merlot
While a white wine is the traditional pairing with this dish, this light bodied Merlot is an interesting alternative.  Light in body with plenty of fresh fruit flavors like tart plum, persimmon and black current, this wine won’t overpower the delicacy of the clams and will stand up to the garlic and black pepper elements of the dish.

CLAMS AND LINGUINE

By Matthew MacCartney, Executive Chef, Jamestown Fish

Clams and linguine is a favorite among the Rhode Island quahoggers who bring us the sweetest, freshest clams we’ve ever tasted. Our version of this well-loved dish takes the “less is more” approach inspired by our friend Joe Bruno at Pasta Nostra and focuses only on the star of the show: the clam.

40 Littleneck clams (about 2 cups shucked), washed

and shucked; juice strained and reserved*

8 cloves garlic, crushed

⅓–½ cup extra-virgin olive oil

⅛ cup fine sea salt

1¼ pounds fresh linguine

40 twists black pepper

½ bunch fresh Italian parsley, stemmed, washed, dried and chopped

Remove and discard the soft black part of the clam connected to the body. Chop the clam bodies in half. Reserve chopped clams and juice separately in the refrigerator.

Heat garlic and olive oil in a 12-inch skillet over medium heat. Cook garlic until blond (not browned) and fragrant, then remove pan from heat. Remove garlic from oil to prevent further cooking and set aside.

Bring 5 quarts water and the sea salt to a boil. Add pasta to boiling water and move gently with a fork to prevent sticking. Cook until just underdone, about 2 minutes; strain. (Note: If using dry linguine, cook until just al dente, no more.)

Working quickly while the pasta is cooking, add reserved clam juice to skillet and bring to a simmer. Add reserved garlic and black pepper. Add strained pasta and shucked, chopped clams to the simmering clam juice and olive oil for 1 minute, tossing until most of the liquid is absorbed.

Divide pasta among four warm shallow pasta bowls. Garnish with parsley. (Dissuade your guests from adding cheese! This dish doesn’t need it.) Serve immediately.

Serves 4 as a main course.

Here at Bottles Fine Wine, we love sharing our food & wine pairing knowledge. Our current in store wine display features regions of Italy and wines that pair with each winter recipe. Read on to learn a little bit about Piedmont and wines that match this recipe for Pan-Roasted Winter Squash Risotto, with Seared Scallops and Cider Reduction. Swing by and be sure to look for the large wine display! Also, thank-you Edible Rhody for providing Italian recipes from local chefs from around Rhode Island.

Piedmont wine food pairing ideas
PIEDMONT
Piedmont is in the Northwest corner of Italy, cut off by the sea by Liguria and surrounded on three sides by the Alps. The region is much cooler than most wine growing areas and is best known for the beautiful, elegant but powerful wines of Barolo and Barbaresco. Typical food items from Piedmont are risotto, polenta, white truffles and dishes with cream sauces.
WINE RECOMMENDATIONS

2011 Stefano Massone Cortese di Gavi

This is one of our favorite wines at Bottles for its balance of value and wonderful savory fruit flavors.  Look for flavors of roasted nuts and hay, with a bit of fresh peach and honeydew melon flavors in the background – and remember, this is more of a savory wine than a fruity one, making it a perfect match with the haunting flavors of the squash and the clean minerality of the scallops.

2011 Guidobono Langhe Nebbiolo
Nebbiolo is the grape used to make the iconic Barolo and Barberesco wines from the Piedmont region and this is a stunning example of the grape and a fraction of the price.  This is a medium bodied wine, with flavors of black cherries, black plums and spices.  There is plenty of acidity in the wine that allows it to cut through the richness of the risotto, but doesn’t overpower the delicate texture and flavor of the scallops.

PAN-ROASTED WINTER SQUASH RISOTTO
with Seared Scallops and Cider Reduction

From Chef Neil Manacle, Fluke Wine Bar & Kitchen, Newport

1 medium acorn squash, halved and seeded

12 sea scallops, patted dry

Kosher salt and freshly ground pepper to taste

2½ cups clam juice

3 tablespoons olive oil

3 tablespoons butter

1 medium onion, chopped

1 cup Arborio rice

½ cup cooked and finely chopped bacon

1 tablespoon chopped fresh sage

1 tablespoon chopped fresh thyme

1 cup apple cider, heated until reduced by half

Preheat the oven to 400°. Place the squash on a parchment lined sheet pan, cut side down, and roast until soft (45 minutes).

Cool and purée the flesh only; set aside. Season the scallops with salt and pepper and refrigerate until needed.

Heat the clam juice in a small saucepan and continue to keep it warm on the stovetop.

In a separate saucepan, heat 1 tablespoon of the olive oil and 1 tablespoon of the butter, add onions and cook until lightly caramelized. Add Arborio rice, stirring for 1 minute until rice is slightly translucent. Add the warm clam juice about ¼ cup at a time, stirring until absorbed before adding the next measure. Keep stirring the risotto.

While the rice is cooking, heat the remaining olive oil in a sauté pan until very hot. Sear the scallops for 3 minutes on each side (do not crowd); remove from heat and keep warm.

After about 10–15 minutes, when the risotto is tender but still slightly firm to the bite, add the squash purée, bacon and herbs; incorporate well. Add the remaining butter and season with salt and pepper. Divide into warm, shallow bowls and top with the seared scallops and drizzle with cider reduction.

Serves 6.

Italian Food & Wine Pairing: Emilia-Romagna & Pork Tenderloin

As part of our in-store wine display, we are featuring regions of Italy by pairing yummy recipes with matching wines. Keep reading to learn about the Emilia-Romagna region of Italy and some wines that pair with the Wood-Grilled Pork Tenderloin dish. A big thank-you to Edible Rhody for providing Italian recipes from local chefs from around Rhode Island.
wine map emilia romagna

EMILIA ROMAGNA
Emilia-Romagna’s location in Italy allows for an enormous diversity and abundance of cuisine.  From the coastal areas that are famous for its eels and clams, to the interior that is known for its wild game and pork based foods like Prosciutto di Parma and Mortadella from Bologna.  This pork recipe includes traditional ingredients from Emilia-Romagna like Crimini mushrooms, and aged Balsamic Vinegar from Modena.
WINE RECOMMENDATIONS

2011 Tre Monti Albana Secco White

If you prefer white with pork, this is a perfect match!  Albana is a full-bodied white with mouthfilling flavors of ripe peach and plum. It has a delicious savory bitter almond element on the finish that balances out the intense, luxurious fruit.  A great match with charred flavors with the pork and the savory, earthy flavors of the crimini mushrooms.
2011 Tre Monti Campo di Mezzo Sangiovese Superiore
The elegant and straightforward style of this Sangiovese pairs well with the rich flavors of the grilled pork and won’t overpower the flavor of the fine olive oil and fresh cherry tomatoes. Look for aromas of crisp dark fruits and red flowers with flavors of richly flavored dark cherries and baking spices.

*Tre Monti wines were also featured on Anthony Bourdain’s ‘No Reservations.’

WOOD-GRILLED PORK TENDERLOIN

over Shaved Mushroom Crudo with Aceto Balsamico di Modena
Chef/Owner Brian Kingsford, Bacaro, Providence
After the long cold winter, the freshness of the raw mushrooms with their earthiness is gently kissed by the oil of sun-drenched olives—a perfect marriage for the first charcoal fire of the season.
3 pounds fresh pork tenderloin
3 tablespoons fresh lemon juice
½ cup virgin olive oil (Sclafani, Bertolli, Filippo Berio, etc.)
Kosher salt and fresh-cracked black pepper to taste
1 pound Crimini mushrooms, cleaned and thinly sliced
Estate-grown olive oil (Capezzana, Regaleali, Olio Verde, etc.) as needed
Mediterranean sea salt (small grind) as needed
Pinch of chopped fresh rosemary
Aged balsamic vinegar (Aceto Balsamico di Modena) as needed
Cherry tomatoes, sliced (optional)
Place the pork in a single layer in a deep, nonreactive baking dish. Mix the lemon juice with the ½ cup olive oil and a pinch to ½ teaspoon of kosher salt. Pour the liquid over the pork and marinate for 2–3 hours.
Preheat a charcoal grill to medium-hot. Season the pork with kosher salt and pepper and place it on the grill, being cautious of flare-ups. Cook until the internal temperature reaches 140°, about 3–4 minutes per side. Transfer the pork to a rack suspended over a plate to collect drippings; cover loosely with foil and rest in a warm place for about 5 minutes. (For medium doneness, the internal temperature should reach 150° after resting.)
Meanwhile, drizzle the mushrooms with the estate-grown olive oil and a touch of sea salt. Slice the pork ¼ inch thick across the grain and fan the slices over the mushrooms. Pour the pork drippings over the meat and sprinkle on the rosemary and additional sea salt to taste. Drizzle with estate-grown olive oil and vinegar. Garnish with cherry tomatoes if desired. Serve with a salad of fresh organic mixed greens with a touch of lemon and olive oil.
Serves 4 to 6.

Dorothy Parker Gin

“I like to have a martini,
Two at the very most,
After three I’m under the table,
After four I’m under my host.”
-Dorothy Parker, The Collected Dorothy Parker

Dorothy Parker American Gin, a creation by the New York Distilling Company, has arrived at Bottles! This gin is a homage to Dorothy Parker, an American writer, critic, and satirist, known for “her sharp, biting humor and widely quoted quips.” (nydistilling.com).

This small batch gin is well-balanced and full of flavor. Juniper, coriander, elderberries and the inclusion of cinnamon gives a little spicy kick on the finish. Great for gin and tonics or sipping, but especially perfect for a neat martini, Ms. Parker’s favorite.

You can read more about Dorothy Parker, New York Distilling Company, and Dorothy Parker Gin at the Dorothy Parker Society website: www.dorothyparker.com

The Dalmore

We are currently featuring The Dalmore Single Highland Malt Scotch Whisky. Bottles staff were lucky enough to taste through each expression with Ralph Rooke, brand ambassador for The Dalmore. Some favorites were King Alexander III, Cigar Malt Reserve, and the Shackleton reproduction of Mackinlay’s Rare Old Highland Malt. Watch the video to learn a little about The Dalmore’s long history and the different expressions available here at Bottles.

The 12
Matured for an initial nine years in American white oak ex-bourbon casks before being carefully divided. One half continues its maturation in bourbon barrels, the other half is transferred to 30 year old Matusalem oloroso sherry casks. Complex, yet balanced, The Dalmore 12 year old is the epitome of the Dalmore house style.
The 15
Twelve years maturing in American white oak ex-bourbon casks, then a three year finish in three different sherry woods – Amoroso, Apostoles and Matusalem oloroso. A robust, yet elegant spirit.
Cigar Malt Reserve
The Dalmore Cigar Malt Reserve benefits from a judicious selection of aged stocks drawn from casks of three types: American white oak ex-bourbon casks, 30 year old Matusalem oloroso sherry butts and premier cru Cabernet Sauvignon wine barriques. Bottled at 44% alcohol by volume, the body, structure and character of this extraordinary expression is the perfect complement to a fine cigar.

King Alexander III
Crafted to honour the act of saving Scotland’s King in 1263, this expression unites six specially selected casks housing spirit of perfect maturity. Whiskies matured in ex-bourbon casks, Matusalem oloroso sherry wood, Madeira barrels, Marsala casks, port pipes and Cabernet Sauvignon wine barriques are brought together in perfect harmony. Each cask gives its own flavour notes, delivering a unique complex single malt whisky revered by connoisseurs.

Castle Leod
This limited edition bottling celebrates the ancient and historic seat of Clan Mackenzie and is the second in a series crafted by Master Distiller Richard Paterson in homage to Clan Mackenzie.
Castle Leod has been home to the Caberfeidh, Chief of the Clan Mackenzie, since 1606 and is located just 14 miles from the The Dalmore Distillery. This classic Vintage 1995 expression was matured initially in American white oak and Spanish sherry wood, before being transferred for a final 18 months to barriques from a legendary 1st cru classe Bordeaux chateau.
Shackleton
In 1908, explorer Ernest Shackleton led his famed Nimrod expedition to the South Pole. Among his essential provisions was twenty-five cases of 1907 Mackinlay’s Rare Old Highland Malt. While the men failed to reach the South Pole, they did manage to make it back to base camp and safely home. Sadly the three cases of whiskey were left to fend for themselves. In 2007, New Zealand’s Antarctic Heritage Trust discovered the three cases and a long process respecting scientific protocols began. In 2010 a team of scientists opened the crates to discover eleven bottles, ten still in the wrapping! The pristine, untouched bottles were the first chance for scientists and distillers to study whiskey prior to the Industrial Revolution. The whiskey has been replicated with malts from Glen Mhor, Glenfarclas, Mannochmore, Tamnavulin, Glen Rothes, Pulteney, Ben Nevis and Jura – varying from eight to thirty years aged in the finest sherry barrels.  Apple, pineapple with hints of smoke and creamy caramel are just a few of the multitude of flavors in every sip.

Pretty Things Beer and Ale Project

This past spring, Bottles (we’re an inquisitive liquor store in Providence, RI, full of local beer enthusiasts) was fortunate enough to pay a visit to Pretty Things Beer & Ale Project. Dann and Martha Paquette run Pretty Things, which is based in Somerville, Massachusetts, but brewed in Westport, MA. Pretty Things beers are known for being delicious, quirky interpretations and twists on classic beer styles. Watch the video to take a quick craft beer journey with Liam, the Bottles Beer Manager.

The visit happened to coincide with the 4-year anniversary of the first batch of Jack D’Or. You can read the full description of Jack D’Or and the emblematic, mournful grain of barley named Jack, HERE.
